One of the challenges at My Readable Feast is to find recipes that go with the books or activities. Much to my surprise, people have actually concocted some Pinocchio recipes.

Here are a few:

Geppetto’s Fruit Dip
Cast party recipe from KMR Scripts

Ingredients:

1. 8 oz pkg  cream cheese (softened)
2. ¾ cup brown sugar (light or dark)
3. ¼ cup white sugar
4. 1 tsp vanilla extract

Directions:

1. Mix everything in a bowl until creamy. 
2. Let set in refrigerator an hour or so to let the sugars dissolve.
3. Great with apple slices or spoon on bananas.

Pinocchio’s Artichoke Dip

Ingredients:

1. 1 (14 oz) can artichoke hearts — drained and chopped
2. 1 cup (4 oz) grated parmesan cheese
3. 1 cup mayonnaise (or Miracle Whip)
4. 1 tomato, chopped sliced green onions (About 6-8.  Use the green parts, too.)

Directions:

1. Mix the artichoke hearts, parmesan cheese and mayonnaise together. 
2. Spoon into a pie plate and bake at 350º for about 20-25 minutes or until lightly browned. 
3. Remove from oven and sprinkle the onions and tomatoes on top. 
4. Serve with crackers, chips or hot bread and enjoy!

Pinocchio Pie

Ingredients:

1. 3/4 c pepperoni, diced*
2. 3/4 c muenster cheese, cubed
3. 3/4 c flour
4. 2 eggs
5. 1 c milk

Directions:

1. Place ingredients in bowl in the order given.
2. Stir with a slotted spoon until all lumps are out (except cheese and pepperoni).
3. Pour in buttered pie plate and bake at 400 for 30-35 minutes.

*The last couple of times saucymomma made this recipe, her kids though it was too spicy. So, her deli man gave her a mild Italian salami with a hint of fennel, called “Pinocchio,” thus the name of the dish.

Pinocchio Cake
by Bella, serves 6

Ingredients:

Layer:

1. 3 egg yolks
2. 1 dl (1/2 cup) sugar
3. 5 tbs cream
4. 2 tsp baking powder
5. 1 1/2 dl (3/4 cup) all-purpose white flour
6. 1 1/2 dl (3/4 cup) melted, cooled butter

Meringue:

1. 3 egg whites
2. 2 dl (1 cup) sugar
3. 1 tsp vanillin sugar’ target=_blank>vanilline sugar
4. flaked almonds

Filling:

1. 3 dl (1 1/2 cup) whipping cream
2. 1/2 liter (good 2 cups) fresh berries like raspberries

Directions:

1. Heat the oven to 200ºC / 400ºF.
2. Beat egg yolks and sugar white and fluffy.
3. Add flour mixed with baking powder, cream, and the melted fat. Stir to a smooth mixture.
4. Beat the egg whites stiff. Add sugar and vanillin sugar’ target=_blank>vanilline sugar and continue beating until really stiff.
5. “Dress” a roasting pan with baking paper, pour in the cake mixture and spread it out evenly.
6. Spread the meringue mixture on top and sprinkle with flaked almonds.
7. Bake for about 5 minutes, lower the heat to 175ºC / 350ºF, and continue baking for 20 – 30 minutes more.
8. Remove cake from oven and allow to cool.
9. Split it in two horizontally. Cover one half with whipped cream mixed with the mashed berries and put the other half on top. Decorate with berries and lemon balm leaves. Enjoy!
